Monday Meals: Turn off the Heat, No-Cook Meals

Can’t stand the heat, stay out of the kitchen? No way! Rising temperatures inspire us to make meal prep simple and cool. Skip the oven and even the grill; serve up delicious and healthy meals that feature raw or precooked elements and stay chill. We’re not the only ones trying to avoid the heat. Plenty of our favorite destinations on the web are pulling together their favorite hot weather spreads.

Cooking light offers a roundup of some of their go-to no-cook summer meals. Featuring plenty of veggies and subbing in precooked protein like rotisserie chicken, canned tuna and beans when extra support is needed. The Green Gazpacho with Corn and Radish Salad ups the fresh factor by featuring honeydew melon.
