Monday Meals: Make a Mid-Week Fiesta with Fish Tacos

Fish tacos are the perfect mid-week, pick-me-up meal. Something about assembling your custom plate, choosing from the bright toppings and spicy garnishes, treating yourself to an extra slice of creamy avocado – it feels like a little party. When you chose grilled or baked fish as your star, you get the bonus benefit of a low or healthy fat protein that you can feel good about. The American Heart Association and the USDA both recommend that we eat at least 2 servings of fish a week, particularly oily fish like salmon, fresh tuna (or canned tuna that is labeled high in Omega-3), herring or sardines.
