Almond rice with dried apricots

Ingredients for 3 servings

For the almond rice

  • 160 g wholegrain basmati rice
  • 50 g dried apricots – cut into strips
  • 1 TBSP peanut oil
  • 3 TBSP almond flakes
  • 1 TSP black mustard seeds
  • 1 TSP curry powder

Preparation

Preparation time: approximately 5 minutes cooking time about 40 minutes

The rice, together with 480 ml of water in a saucepan, bring to a boil, add salt and approx. 40 Min. covered simmer.

The almonds in a fat-free pan roasting, take out and set aside.

The peanut oil in the pan and heat. The mustard seeds and the apricots roast at medium heat until the seeds popping up.

The cooked rice into the pan, with Curry, sprinkle with salt and pepper to taste and the almond flakes.

The almond rice in a bowl and serve.

This rice fits as a side dish, excellent with our vegetable stir-fry with Tempeh.
